Perfume Primers: Gourmand Fragrances for Beginners & Beyond

Soft Turkish delight, gleaming lollipops swirled with creamy caramel, bright red candied apples at the fun fair, the delicious creaminess of rich ganache, bittersweet anise-inflicted licorice sticks and the temptation of fine cognac-filled nuggets of chocolate...If you mentioned these aromas as springboards for composing to perfumers 30 or 40 years ago they'd laugh at you. And yet the novelty of gourmand fragrances came to stay, highlighting perfume "notes" such as chocolate, coffee, cupcakes, whiskey, sugared almond and marzipan, even cotton candy/candy floss!
But what is the definition of a gourmand perfume? Simply put "gourmand" (French: [ɡuʁmɑ̃]): perfumes smell almost "edible" and have"dessert-like" qualities that tickle our taste buds as well as our nose. In French the term only slightly overlaps with "gourmet"(connoting discernment), adding a "greedier" nuance which seems to fit; just reading a notes list of a gourmand fragrance is enough to make one salivate!
Technically as they're built on vanilla and sweet ingredients they're a subcategory of the oriental family of fragrances. Talking with perfumers however I realized their appetizing quality is markedly different from perfumes in which succulent notes -such as peach, spices or vanilla- appeared previously, in that gourmands actually evoke desserts in a more concrete way, whereas the classics only hinted at the pleasures of food & drink they were meant to accompany, via abstraction (the delicious duvet-appeal of Farnesiana's sweet acacia, the cinnamon-sprinkled peach skin of Mitsouko).


In aesthetic terms gourmands are the polar opposite of the inedible feel of most chypres and fougeres whose traditional aim was to conjure grooming products such as powder, soap and shaving cream and thus denote a "polished" appearance. In contrast gourmands are not concerned with that, unless it's the polishing off a particularly tasty dish!
Comfy and delicious, their more laid-back, casual approachability (everyone eats, after all) accounts for their non-snob factor, making them a perfect fit for the end of the 1990s and the 2000s, when they flourished. Could that surge speak of misspent childhoods pampered by a sugar-riddled diet, of a regression into the protective cocoon of kindergarten, or of the desire to at least partake of the olfactory pleasures -if not the gustatory ones- afforded to people on a diet?
The too sweet stuff can be rather nauseating. Some of the Comptoir Sud Pacifique fragrances for instance seem to cater to the hardcore baked goods lovers, being particularly "foody", a looked down upon term by serious perfume lovers who opt for the more refined within the genre.

History of Gourmand genre

Angel by Thierry Mugler (1992) is generally considered the first gourmand with its overdose of ethyl maltol (the scent of cotton candy/caramel) paired with natural patchouli, plus sweet red fruits and a floral "base". Patchouli has an inherent facet that recalls chocolate, boosting the dessert angle of the Mugler pefume. But perfumer Yves de Chiris (alongside Olivier Cresp) put a staggering 30% of camphoraceous patchouli in the compound to counteract the aching sweetness of the sugar note. Its genius lies in its semi-poisonous subtext under the deliciousness: this is dangerous, dark, powerful perfume, almost masculine, reminiscent of the childish joys of the fun-fair but also of its disturbing aspects...Vera Strübi, at the time CEO of Parfums Mugler, says: ''The feminine is not our aesthetic approach.'' Strübi, having met Mugler and the Clarins Group in 1990, has been recognized as "the most audacious and creative president by the entire perfume industry"; the prototype gourmand only later took on the childhood story of Thierry's love of fun-fairs, but still it never was a marketing "recipe" which is probably why it became so successful in the end...
Molinard already had Nirmala in their catalogue since 1955, a scent that smells so close to Angel in its current form that it ignited a heated legal battle about intellectual rights in regards to perfume in France. The truth is the 1990s revamped Nirmala purposefully twisted its recipe to adhere to a more "Angelic" principle...The pioneer claim of Angel is contested nevertheless: Angel was not the first perfume to bring pure, sweet ethyl maltol into the spotlight; that distinction belongs to Vanilia (1978) by L'Artisan Parfumeur, the scent of a "vanilla ice-cone" as per aficionado supermodel Paulina Porizokva.

Still, the caramel-patchouli wildcard juxtaposition of Angel was like nothing else on the market when it came out (the same year as the limpid, totally "clean" L'Eau d'Issey!) and slowly built a cult following, eventually becoming the reference point influencing the entire market to this day (and being a marketing case study!). Angel's spawn is Gremlin-like: 20 years later every house has their "Angel wannabe" (hoping to usurp some of its share on the market): Armani Code for women, Calvin Klein Euphoria, Lancome Miracle Forever, Prada by Prada, Paco Rabanne Black XS, Nina (Nina Ricci), Chopard Wish, Hanae Mori Butterfly...the list is endless! You may see these fragrances colloquially mentioned as "fruitchoulis" in perfume fans conversation, as they all rest on sweet fruits on patchouli; the term is anecdotal.

Of all the variations on the theme, only Lolita Lempicka and Angel's own flanker Angel Innocent (and possibly Sonia Rykiel in the orange sweater bottle and Missoni by Missoni) manage to differentiate themselves enough and inject new ideas; the former through an emphasis on the anisic facets of licorice, the latter by adding a praline note and subtracting the patchouli.
Aquolina Pink Sugar (2003) is another emblematic gourmand, its name an uncontested allusion to pink cotton candy. Again based on ethyl maltol, but with less of the bittersweet edge of Angel that makes it so compelling, yet an equally love-it-or-hate-it fragrance, Pink Sugar smells like overripe strawberries melting into the candy machine.
Dior straddles the category with three of their perfumes in different measure with polarizing results: The original Addict is boozy vanillic and yet with a hint of vulgarity; Hypnotic Poison is the most accomplished in its dark, edible powdery evocation of bitter almonds & musks, whereas the original Miss Dior Cherie from 2005 (before being so messed up with) was a medley of sweet kid's strawberry syrup drizzled onto caramelized buttery popcorn that smelled as cheeky as it sounds.

Gourmands wear nicely in the cooler seasons, although lighter ones, such as Theorema (Fendi) with its orange-filled chocolate note, are fine in summer too. Especially marketable to women (perhaps because they're more mindful of calories or due to indoctrination of adage "sugar and spice and all things nice") gourmands do not exclude men. Some are specifically addressed to them, such as the delicious Lolita au Masculin by Lolita Lempicka, Rochas Man, the so called "Angel for men" A*Men by Mugler (as well as its variations) and Guerlain's L'Instant pour homme Extreme.

Niche gourmands
If the mainstream market is intent on just "copying" Angel without furthering the conversation, the niche fragrance sector seems to offer varied takes on the gourmand genre, some "dark" and sinful, others airier: Annick Goutal Eau de Charlotte, Serge Lutens Five O'Clock Au Gingembre and Arabie, Hermèssence Ambre Narguilé, Lostmarc'h Lann-Ael, Guerlain Gourmand Coquin, Spiritueuse Double Vanille, and Iris Ganache, L'Artisan Parfumeur Jour de Fete, Bois Farine, and Safran Troublant, Laura Tonatto Plaisir, Hilde Soliani Cioco Spesizissimo, Montale Chocolate Greedy, Tom Ford Tobacco Vanille, Frapin 1270, Ginestet Botytris, Parfumerie Générale Aomassai, Serendipitous by Serendipity 3, Luctor et Emergo (People of the Labyrinths), Love by Kilian,  Bond No. 9 New Haarlem, Ava Luxe Milk, Etat Libre d'Orange Like This.
Honorary mention for the loukhoum/Turkish delight fragrances, replicating the famous dessert with rosy and/or almondy notes. Notable examples include Rahat Loukhoum (Serge Lutens), Traversée du Bosphore (L'Artisan Parfumeur), Loukhoum (Keiko Mecheri), Loukoum (Ava Luxe). Although figs are certainly edible and there are many "fig scents" on the market, these are technically classified in the "woods" category, as they evoke the leaves as well as the tree sap in most cases (i.e. Philosykos, Premier Figuier, Figue Amère)

A rather recent sub-category within the gourmand orientals is the "savory gourmands", fragrances which replicate foodie smells but of a non specifically sweet persuasion. One could classify Champaca (Ormonde Jayne) with its steamed rice note in this category, Parfumerie Générale Praliné de Santal with its roasted hazelnuts, Jeux de Peau by Lutens evoking toasted bread, Jo Malone Blue Agave & Cacao, as well as the groundbreaking Womanity by Mugler pairing salty caviar and sweet figs.

L'Artisan Parfumeur Traversee du Bosphore: fragrance review & draw

Any mention of Bosphorus, the strait between East and West, uniting and at the same time dividing Constantinople (Istanbul), which lays on both its banks, never fails to ignite a very palpable nostalgia laced with a smattering of pain for any Greek. We're automatically thinking of the failing grandeur of the Paleologi dynasty and lamenting for the times when Greeks and Turks co-existed in peace for centuries in this most cosmopolitan of Eastern cities. Traversée du Bosphore (Crossing the Bosphorus) by L'Artisan Parfumeur, like its namesake strait, was the straw that broke the ~proverbial~ camel's back, as anything referencing the city of Constantine will make me reminiscence yet again of my forebearers and the sweet camaraderie they had to abandond due to political turmoil. But The City, Istanbul, is in reality neither Greek, nor Turkish. It's neither christian nor muslim. It's a cultural border, a place where everything meets and unites, a cauldron of cultures and men; the place which millions of different people, of different nationalities and religions, loved madly through the centuries. A city so beautiful that there was no other way to call it than The City, η Πόλη!

Traversée du Bosphore comes now from Bertrand Duchaufour and L'Artisan Parfumeur as the symbolic strait between modern French perfumery and its oriental heritage. The unisex fragrance was fittingly inspired by a journey to Istanbul, when at the crack of dawn the cobblestone streets still retain their sleepy languor, like heavy-boned odalisques stealing gazes through the lacework wooden panel of the musharabieh, and when the many fishermen set out to catch their day's worth, packing nets, salty sardines and pita bread. You can easily lose yourself promenading unhurriedly through the small alleys towards the seraglio and Kahrié djami with its blue-peacock mosaics, gazing at the narthex's domes for hours or the many fountains where pilgrims ritualistically wash their head and hands before proceeding. It's a slow world, filled with beautiful wistfulness.



The strange thing about Traversée du Bosphore, part of the Travel series in the niche brand's subplot, is how a -by now- cliché concept (i.e.eastern exoticism) that should be a foregone conclusion (loukhoum, tanneries, saffron, milky salep drink, tobacco in hookahs, opulent roses, strange white flowers......hasn't Lutens exhausted that genre?) smells interesting and contemporary; nothing like a heavy odalisque looking through the parapets or Alladin rolled into plies and plies of plush carpets. Instead it's a gouache of a scent: a transparent suede floriental with soft musky notes, a marriage of rosewater and suede.

Indeed, the list of official notes for Traversée du Bosphore reads like a shopping list of things to find in a Turkish souk or at the very least smells encountered around a Turkish souk. The apple-laced çay (tea) is very popular and no one makes it more delicious than Piyer Loti Kahvesi at Eyup (the European side of the city), a stone's throw away from Sultan Ahmet Mosque and the Byzantine apotheosis that is the temple of Aghia Sophia. Loti is the writer of Aziyadé (see the perfume inspired by it) and knew a thing or two about sensual abandon...Tobacco is still smoked in hookahs; not only by old men in derelict coffee-shops, heavy in political talk, but from younger ones as well, when they finally sit down to have an aimless break. Men and women alike buy fresh phyllo pastry, almonds and pistachios to make baklava, and Turkish delight by the pound to bring back at home. The market is filled with golden and red heaps of spices, precious saffron and dried Turkish roses for using as pot-pourri. Tanneries do work merrily (Turkish leathers have competitive prices), although the effluvium isn't anything one would associate with perfume.

But the summation of the notes or the panoramic vol plané shot does not really tell the whole tale: Duchaufour was no stranger to Byzantine formulae, including everything but the kitchen sink before, and the results are diverse: from the baroque patina gold of Jubilation XXV for Amouage to the carnal tryst of Amaranthine for Penhaligon's, all the way to the deceptively diaphanous muddy-incense of Timbuktu for L'Artisan. His compositions include many pathways that lead to a gauze of orientalia.
For Traversée du Bosphore Duchaufour eschewed clichés to come up with a composition that marries on the one hand Anatolian leather (you will only smell grey suede, really, not harsh quinolines; it's comparable to the note in Sonia Rykiel Woman-Not for Men! and Barbara Bui Le Parfum) and on the other hand Turkish Delight (loukhoum), into a unique interpretation of the leather genre; velvety and whispery soft, opening upside down: After the brief apple çay top (blink and you'll miss it!), you sense the suede and only later the powdery loukhoum accord.
The strangely greyish powderiness of iris dusts the notes like white copra dust enrobes the small rose-laced loukhoum cubes, while saffron with its leathery bitterish facets reinforces the impression and balances the sweeter notes, much like it kept vanilla in check in Saffran Troublant. The iris-leather accord in Traversée du Bosphore weaves a whispery path together with a hint of almond giving a light gourmand nod. The whole smells like rosewater sweets wrapped in a suede pouch, never surupy and very skin-scent like (incorporating that Havana Vanille base), although a tad more flowery feminine than most men would feel comfortable with. It's a fragrance which smells nice and simple like a nostalgic song from an old movie which dies down to a murmur, and might demand your attention to catch the smaller nuances.

As for me I know well that the past is inextricably tied to the future, and revel in thinking of Istanbul as the pathway where cultures and people will eternally meet...and part.

Travel Memoirs: Istanbul part3

Desserts in Turkey take on many aromatic guises in their war-like mission to ruin one's waistline and walking through the marketplace one faces its own portable amunition.
One of the most famous, referenced even in The Chronicles of Narnia, is Turkish Delight: lokum or loukoum. Contrary to what one might be led to believe from homonymous perfumes circulating, such as Rahat Loukoum by Lutens and Loukhoum by Keiko Mecheri, the traditional jelly-like delicasy, lightly dusted so as not to stick, isn't made with almond nor cherry. Instead lokoum is made from starch and sugar and aromatized with rose water and lemon, giving it a refreshing flavour, justifying the Arab name rahat al-hulkum (=contentment of the throat). Varieties might include little cubes with other nuts such as pistachios or walnuts and some types even have a touch of cinnamon or mint aroma.

Another olfactory delight is Salep, a traditional winter drink sold by street vendors in big copper caldrons. Salep is produced by grinding the dried tubers of Orchis mascula, Orchis militaris and related species of orchids, which contain a starch-like polysaccharide, bassorin, with nutritional and heartening properties. It has a reputation of being an aphrodisiac (which might be accounted by the etymology of its plant source, relating it to the Greek word for testicle!). It is milky, flavoured with rosewater or mastic and dusted with cinnamon or nutmeg, to be optionally sprinkled with crushed walnuts on top. Salep enters along with mastic into the traditional Turkish ice-cream, Dondurma, which is much stickier and resistant to melting than regular ice-cream or gelato.

A perfume that has being inspired by this drink is Ayala Moriel's Sahleb. A wonderful comforting fragrance with a starchy pudding quality about it, it gives you the cosy feeling of sipping a dessert rich in buttery creaminess with the aromatic tinge of mastic that recalls the Mediterranean. There is no floral clearly discernible, yet if one leans one's head and inhales deeply, there comes the subtle nuance of the traditional rosy loukoums of the Bazaar, down to the dusty, powdery feel of coconutty copra enrobing them. Vanillic goodness in restrained doses compliments the fluffy and nutty flavour of this softest of gourmands. It makes me nostalgize of the true salep on the streets of Istanbul. Sadly the true thing is forbidden to be exported. But how lucky are we that there is a fix in the form of a fragrance!

After all this indulgence, one needs to come to terms with one's body. When in Rome do as the Romans do. In this Nova Roma, who could deny a Turkish bath? Cagaloglu Hamami is one of the most famous hammams in the city, constructed in 1741 to bring revenue to the library of Sultan Mahmut I, situated inside the Haghia Sophia mosque. It receives both men (from the main street entrace, on Hilal-I Ahmer) and women (from the side street entrance).
Stepping into the various cubicles and rooms with terlik (a kind of slippers) on the feet and a pestemal (clothing wrap), one can see a raised platform of stone (goebektas) in the center, with bathing alcoves all around, in coloured quartz tiles which remove static and help unwind, by sweating and sustaining an internal dialogue. A sight to behold is the pool in the middle of the camegah with its waterjet.
The light is softly filtered through glass from the ceiling in the hot room (Hararet), with small star-like windows on the domes. The air is fragrant with the essences of various unguents and the mind is dizzied into a reverie. The exfoliation with kese is blissful, using lavender, tea, chamomile and olive oil soap. One can bring their own products and Harvey Nichols at 185 Kanyon Alýþveriþ Merkezi provides a rich selection, among which the organic Jo Wood line (by the wife of Ronnie of the Rolling Stones). Amka Bath Oil contains Persian rose Otto, feminine Egyptian jasmine, along with neroli and bergamot for their uplifting effect. Mmmmm...
Next one can require a relaxing massage to recuperate and energise the muscles, which is followed with hair washing and a cold shower, before drinking dark tea, aromatic and dense, at the old marble café-bar. One could get really spoiled in this place!

And yet in the strange, lucid melancholy of such an abode, I cannot help but wonder how many women or men with tragic love tales, unfulfilled desires and bittersweet memories have passed from here through the years, sighing and opening their souls to one another as mussels do when steamed.

Like this most touching tale: A Touch of Spice(Politiki Kouzina). A young Greek boy (Fanis) grows up in Istanbul, whose grandfather, a culinary philosopher and mentor,teaches him that both food and life require a little salt to give them flavor; they both require... a Touch of Spice. Fanis and his parents leave Istnabul during the 1963 deportation of Greeks. He grows up to become an astronomer and an excellent cook using his cooking skills to spice up the lives of those around him. 35 years later he leaves Athens and travels back to his birthplace of Istanbul to reunite with his grandfather and his childhood love, the Turkish girl Saïme, now married with a daughter; he travels back only to realize that he forgot to put a little bit of spice in his own life...



The song (Baharat, tarçın ve buse) translates as:

"That night you left me
you went with a pinch of spice
a shadow inside the marketplace
I laid salt on the streets of Beyoglu
to find you in the hideouts

A kiss of cinnamon and spice,
recipe hidden in the attic
Moonlight and the Bosphorus lonely
That lighthouse is our childhood love"


On that bittersweet note, we will leave the enchanting Istanbul behind...
