Great list! For de Nicolai, there's also 69 rue Poincare (Victor Hugo). From the store you can see the lab through a glass, and I once noticed the perfumer herself at a business meeting there. While not in the main shopping district, the posh residential area also has a Diptyque and a Malle (see below).

While not strictly an outlet for perfume Cire Trudon is a wonderful place for anyone interested in aroma. The oldest manufacturer of scented candles on earth.

Again not a perfumery but for a most memorable olfactory experience Marriage Freres is hard to beat. Insinuating the scent of rare teas into everything from food to incense. Would that the air in the shop were for sale.
